Ingredients
- 2 cups unsweetened tart cherry juice
- 1/2 cup cold water
- 2 packets Knox unflavored gelatin
- 3 Tbs honey (adjust to taste)
- 1 tsp lemon juice (optional)
Instructions
- Pour cold water into a saucepan. Sprinkle gelatin evenly over the surface and let sit 2 minutes to bloom.
- Warm over low heat, stirring gently, until gelatin is fully dissolved (2–3 min). Do not boil.
- Remove from heat. Stir in cherry juice, honey, and lemon juice if using. Taste and adjust honey as needed.
- Pour into an 8x8 dish or individual cups. Cool to room temp (~10 min), then transfer to the refrigerator.
- Chill until fully set, at least 4 hours or overnight. Cut into cubes or scoop and serve cold.
Tips
- Firmer texture: Add a 3rd packet of gelatin for cubes that hold their shape well (great for finger gelatin).
- Fresh fruit: Stir in pitted cherries or blueberries before chilling. Avoid fresh pineapple, kiwi, or papaya (their enzymes prevent gelatin from setting).
