Ingredients

  • 2 cups unsweetened tart cherry juice
  • 1/2 cup cold water
  • 2 packets Knox unflavored gelatin
  • 3 Tbs honey (adjust to taste)
  • 1 tsp lemon juice (optional)

Instructions

  1. Pour cold water into a saucepan. Sprinkle gelatin evenly over the surface and let sit 2 minutes to bloom.
  2. Warm over low heat, stirring gently, until gelatin is fully dissolved (2–3 min). Do not boil.
  3. Remove from heat. Stir in cherry juice, honey, and lemon juice if using. Taste and adjust honey as needed.
  4. Pour into an 8x8 dish or individual cups. Cool to room temp (~10 min), then transfer to the refrigerator.
  5. Chill until fully set, at least 4 hours or overnight. Cut into cubes or scoop and serve cold.

Tips

  • Firmer texture: Add a 3rd packet of gelatin for cubes that hold their shape well (great for finger gelatin).
  • Fresh fruit: Stir in pitted cherries or blueberries before chilling. Avoid fresh pineapple, kiwi, or papaya (their enzymes prevent gelatin from setting).
