Macro Perfect Cajun Beef & Veggie Rice

INGREDIENTS
½ Tbs cooking fatoil, butter, or ghee
3 large carrots, thinly sliced
2 bell peppers, sliced
4 green onions, slicedkeep white and green parts separate
1 lb 90/10 ground beef
2 tsp Cajun seasoningcheck the label; many blends are salty
1 Tbs tomato paste
4 Tbs water
3 cups cooked riceabout 1 cup uncooked
Salt and pepper, to taste
INSTRUCTIONS

Heat cooking fat in a large skillet over medium heat. Add carrots, peppers, and green onion whites; sauté 10 minutes, until softened.

Add beef and cook about 10 minutes, breaking it up with a wooden spoon, until browned.

Stir in Cajun seasoning and tomato paste; cook 1 minute, until fragrant.

Add rice and water; cook 3 to 4 minutes, stirring, until heated through. Season with salt and pepper, top with green onion greens, and serve. Enjoy!
