Egg Bake (Macro Perfect Meal Variation)
A make-ahead breakfast that covers you all week! Fruit on the side rounds out the macros.

INGREDIENTS
1 bag (30 oz) frozen shredded hash brownsthawed overnight in the fridge, then drained or patted dry
1 lb 93/7 ground turkey or beef
1 Tbs cooking fatuse a little to grease the dish
1 yellow onion, diced
1 jalapeño, mincedseeded for less heat
2 to 3 handfuls spinach, chopped
8 large eggs
1 cup 0% cottage cheese
1 red bell pepper, diced
½ cup shredded sharp cheddar
½ cup grape tomatoes, quartered
½ tsp each salt and pepper
To serve: 1 cup berries per servingor 1 medium orange or apple
INSTRUCTIONS

Preheat oven to 350°F. Grease a 9x13 baking dish and spread hash browns evenly in the bottom.

In a large bowl, whisk eggs, cottage cheese, bell pepper, salt, and pepper.

Brown turkey in a large skillet over medium heat, 8 to 10 minutes; add to the bowl.

In the same skillet, heat remaining fat and sauté onion and jalapeño 5 minutes. Stir in spinach until wilted. Add to the bowl and mix.

Pour over hash browns, top with tomatoes and cheese, and bake 45 to 50 minutes, until the center is set.

Serve each slice with 1 cup berries (or an orange or apple). Enjoy!
